This week in healthy eating...

See? I wasn't just being preachy in this post.  I meant it. Here's one example from this week.

Spaghetti sauce (organic, from a jar) with broccoli and mushrooms stirred in. Served with whole wheat pasta. The kids gobbled it up and didn't even realize they were eating veggies!

This week I also made super easy taquitos. I sauteed onions, mushrooms and tomatoes. Then I browned lean, ground turkey breast. I stirred in the onion mixture. I spooned the meat down the center of whole wheat, low carb tortillas. I topped it with part-skim mozzarella cheese, rolled 'em up, brushed 'em with olive oil and baked 'em @ 350 degrees for 10 minutes.

Served it with low-fat sour cream and Salsa Verde from Trader Joe's.
